He died on Thursday morning. Police are now treating his death as a homicide.
Detectives believe his attacker ran off after the punch.
The Hope Island father-of-two had been dining with friends when he walked outside the restaurant about 9.20pm.
Hayes was seen talking to a man who is believed to have “delivered one blow” to his face, Detective Inspector Chris Ahearn said on Wednesday.
No suspects have been identified and the nature of the conversation is unknown, Ahearn said.
“We are intent on identifying the person responsible for Mr Hayes’ assault,” he said.
The suspect is believed to be aged between 20 and 30 and has short dark hair.
He was wearing a side satchel or man bag over his shoulder.
There was “nothing overtly aggressive about the conversation” until Hayes was felled by the front-on blow, Ahearn said.
Police have reiterated their call for witnesses, including anyone with any dashcam or CCTV footage in the Sanctuary Cove and Hope Island areas between 9pm and 10pm on Saturday.
