33 – proper cooling methods used; adequate equipment for temperature control - Comments: At time of inspection ehs observed that the facilities walk in freezer had an ambient temperature of 40 degrees. Many products within unit were totally defrosted to touch but holding below 41 degree f. Facility requiring that all partially defrosted foods be removed from walk in freezer to walk in refrig and may not be refroze. By end of inspection ehs observed that unit ambient temperature dropped below 32 degrees f. Facility manager stated that unit was on a defrost cycle. Facility must ensure that defrost cycle dose not cause foods to defrost.
